Witches' Finger Cookies

A soft and chewy, spooky treat for everyone to enjoy.

These soft cookies are fun for the whole family to make, and are definitely a crowd pleaser at Halloween

INGREDIENTS

  • 2 3/4 cups(358g) all-purpose flour

  • 1 tsp baking soda

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1 cup (224g) unsalted butter, room temperature

  • 1 cup+ 2 tbsp (233g) granulated sugar

  • 2 tbsp (28g) light brown sugar

  • 1 large egg

  • 2 tsp vanilla extract

For the witches' nails :

  • Green food coloring

  • Gel icing & your choice of sprinkles

Steps

Step 1

Preheat oven to 350°F (180°C) and line your baking sheet with parchment while we move onto mixing all dry ingredients aside from sugar in a medium sized bowl.


Step 2

Use a hand mixer or kitchen aid to whisk the butter and sugar together to create a fluffy consistency. You can tell it's mixed well when it changes in colour slightly. Next add in the egg, vanilla extract and the green food colouring.


Step 3

Mix the dry ingredient mixture with our butter mixture and use a spatula to combine all the ingredients. Make sure not to over mix or this cause the cookies to be drier and tougher than we would like.


Step 4

Using a small cookie scoop or a tablespoon start forming balls of cookie dough that are stiff enough to form but soft enough to squish and start forming the witch finger shapes on the lined baking sheet. Use a butter knife to create little lines for the witch knuckles and the flat side of a butter knife to create the nail bed.

Step 5

Bake cookies for 7-8 minutes, removing just before the edges turn golden. The cookies will still be soft when you take them out so it is important to let them cool completely for about 5 to 6 minutes before decorating so they set right.

Step 6

Use the gel icing all along the nail bed and cover with sprinkles and enjoy!
